This January, Disneyland Paris presents two extraordinary Frangipane galettes, crafted with creativity and expertise by its in-house patisserie teams. These desserts not only offer delectable flavors but also tell stories deeply connected to the park and its iconic locations.
A Tribute to the Clock: The Signature Galette at Fleur de Lys Bar
The Fleur de Lys Bar at the luxurious Disneyland Hotel showcases a galette distinguished by its unique design and refined flavors. This creation, developed by the Food and Beverage team, captures the majestic atmosphere of the hotel and pays homage to the famous clock in the lobby.
The “Signature Galette” features a Guérande sea salt puff pastry encasing a creamy vanilla and almond Frangipane filling. It is topped with a caramelized tuile delicately placed on the pastry, replicating the design of the iconic clock. The galette epitomizes elegance and sophistication, transforming traditional ingredients into an exceptional composition.
Pierre-Yves Le Gall, Culinary Development Manager at Disneyland Paris, describes the development of this galette as a balance between tradition and creativity. Le Gall, who has been with Disneyland Paris since 1999, brings a wealth of experience, including his time at the renowned California Grill (now La Table de Lumière). His expertise in crafting themed and seasonal desserts made this creation a standout addition to the menu.
Galette Croissants: A Creative Delight at Victoria’s Home-Style Restaurant
At Victoria’s Home-Style Restaurant, guests can savor a fresh take on the classic Frangipane galette starting January 7, 2025. Known as the “Galette Croissants,” this innovative dessert combines croissant dough with a rich chocolate-almond cream and roasted pecans. The result is a treat reminiscent of a brownie while maintaining the essential elements of a traditional galette.
The creation of this unique galette was led by Timla Chebbah, Chef de Partie at Les Délices de Minnie. Chebbah began her career in 2017 at Disneyland Paris’s patisserie, gaining recognition through her participation in the “Meilleurs Apprentis de France” competition, where she won at both district and regional levels in 2018. After further honing her skills, she returned to the team in 2022, bringing her expertise and passion for innovative desserts to this project.
Chebbah explains that this galette reflects the drive for innovation fostered at Les Délices de Minnie. The croissant dough lends a delicate, crispy texture, while the chocolate-almond cream and roasted pecans add depth and richness. This galette was designed specifically for Victoria’s Home-Style Restaurant, offering guests a dessert with a distinct character that combines tradition with modernity.
Les Délices de Minnie: The Workshop Behind the Creations
The patisserie Les Délices de Minnie is at the heart of Disneyland Paris’s dessert innovations. Here, talented Cast Members collaborate to develop seasonal and thematic desserts for the park’s various restaurants, ensuring guests enjoy unforgettable culinary experiences.
The Galette Croissants is a prime example of the creative synergy within the patisserie. Timla Chebbah describes the process as one of brainstorming and refinement, involving both the team at Les Délices de Minnie and the management of Victoria’s Home-Style Restaurant. The goal was to craft a galette that stood out while honoring the traditional foundation of the Frangipane galette.
Celebrating the Tradition of Frangipane Galettes in January
The launch of these two new galettes aligns with Disneyland Paris’s tradition of celebrating January with special Frangipane pastries. Each year, the patisserie teams rise to the challenge of reimagining classic recipes with creative twists, offering guests new culinary experiences. The galettes at Fleur de Lys Bar and Victoria’s Home-Style Restaurant exemplify this dedication, showcasing how tradition and innovation can harmoniously coexist.
